Single Serving No-Bake Protein Bar

Long time no post! I've been so busy lately, uni is really stressful and life is just happening. I have a lot of ideas for new posts but unfortunately no time to write them, however, i have this quick recipe to share with you!
After making my 3 ingredient single serving no-bake granola bar I wanted to make a protein version. And I have to say, I think I like this one better than the granola bar! The texture is very soft, it's not like any store-bought protein bar. You only need 4 ingredients to make it, it's super quick, simple and delicious!

Here's what you'll need:

- 15 g protein powder
- 5 g coconut flour (or oat flour)
- 5 g nut butter of choice
- 5 g maple syrup
- water

Heat up the nut butter in the microwave to make it softer, add the other ingredients and mix. Now slowly add water bit by bit, mixing after each addition. The amount will depend on your protein powder, but you really don't need much, maybe a tablespoon? You want to add water until everything just starts coming together so that you get a kneadable dough, not a batter. Form into a bar shape, wrap in aluminum foil and put in the fridge to set. (You can eat it right away, it does hold its shape but it's very soft.) If you've added to much water either adjust by adding more protein powder/flour or put in the microwave for a few second and eat as a microwave protein cookie :D

Much love,

Jeannie
